Our cows and calves are (mostly) a breed called 'Beefmaster' - the first distinctively American cattle breed, first named in the 1940's - which is a blending of Hereford (the classic dark-red and white British beef breed, for cold tolerance and muscling), Dairy Shorthorn (for mothering and milking), and Brahman (the Hindu sacred cow - for heat tolerance and gentle temperament).
They are wonderful: intelligent, hardy, hard-working, easy to handle. We have known most of them since their births and can usually tell you who their grandmothers were - it's an incredible relationship. In fact, it's the relationship that makes it all work: the tie between humans and their animals is ancient and inexplicable, born of trust, mutual need, and reverence.
We feel ourselves to be part of an ancient cycle, part of a pattern woven long ago, and our hope is to be true to this Plan, we humans and the creatures in our care.
The cattle of Waterfall Hollow Farm are
raised on organically-managed pastures
filled with native and naturalized grasses,
clovers, and herbs, drinking pure Ozark
Mountain spring water. They never
receive sub-therapeutic doses of
antibiotics, synthetic hormones, animal
source feeds, nor feed additives. The cattle
move to fresh pasture every day or two
during the growing season, which gives them
the highest quality forage available and
keeps them naturally healthy, happy, and
calm.
Studies show that beef from
pasture-finished cattle, those who stay
on the farm and eat fresh green plants all
their lives, is not only rich in zinc,
B-vitamins, iron, and the other usual
nutrients beef is famous for, it is an
excellent source of beta carotene and
vitamin E, as well as heart-healthy Omega-3
essential fatty acids (EFA's), higher levels
of which have recently been linked to
decreases in depression and other chronic
physical conditions, and contains the most
potent naturally-occurring anti-carcinogen
currently known, conjugated linoleic acid (CLA),
in its most available form. Pasture-finished
beef is lower in saturated fats and
cholesterol than its confinement-finished
cousin. Best of all, the texture and flavor
of pasture-grown beef is delicious and
deeply satisfying--your taste-buds will
recognize it as what you've been hungry for!
The taste-testers at Organic Style
magazine agreed--Waterfall Hollow Farm's
beef won their beef taste test, published in
the March 2004 issue.
Quality of life for our Beefmaster cattle as
well as the quality of our beef is uppermost
in our minds, that's why they graze organic
pastures and drink pure spring water. Here’s
what we do to further ensure their health
and well-being: above all, we treat them
humanely and with honest affection; they get
all their immunizations, which are
encouraged in organic production; we deworm
the calves at weaning, around nine months of
age, with an effective product allowed in
organic dairy cattle. We feed a small amount
of grain to them during the cold wet
winters, as well. The steers are usually 2
to 3 years old at harvest (summer - fall)
after a long spell of fresh green grazing,
so the steaks are super-tender and richly
flavorful. Our cattle
never receive sub-therapeutic doses
of antibiotics nor synthetic hormones,
animal-source feeds, medicated feed
additives, and are never confined. We give
them one or two full years longer than
conventional beef producers; cattle just
grow more slowly in their native environment
than when they're pushed.
