This USDA site has good information about the environmental benefits of grassfarming, including a discussion on carbon sequestration, the phenomenon whereby pastureland absorbs excess carbon dioxide from the air and stores it in the soil as organic matter. The Institute for Environmental Research and Education (IERE) is a non-profit organization dedicated to fact-based environmental decision making. IERE has a sustainable agriculture program based on farm environmental management systems that measure performance based on Life Cycle Assessment. IERE has offices in Vashon, Washington and Davenport, IA. This is a rich site devoted to an exploration of the Paleolithic diet. There is good evidence to suggest that a diet that resembles the Paleolithic diet is ideally suited for present day humans.  Grassfed animal products match the Paleolithic profile.  (A section titled "An Interview with Ward Nicholson" discusses major changes in the human evolutionary diet.  Worth reading.)
