Waterfall Hollow Farm is truly “a tiny company”*
and you get personal service when you order from us! The pastures have been managed
organically since 1981, when Dave and I moved back to my family's farm
after college. We started the first direct-marketed grass-finished beef
business in the region back in 1995, under the name "Waterfall Hollow
Farm's Natural Beef", which evolved into "Waterfall Naturals
Pasture-Finished Beef" about ten years ago.
Dave's
graduate studies were in horticulture, and he has the greenest thumb of
anyone I know. During college he became committed to the organic way of
doing things, and usually has huge piles of compost and mulch all over
the place. He's developed clever, cheap electric fence designs that
make things very easy on us and the cattle. He can fix anything.
I have been a president of Arkansas Certified Organic, Inc.;
secretary-treasurer of Grassroots Grazing Group; and a farmer-member of
the Leadership Committee for the Professional Development Program of
Southern Sustainable Agriculture Research and Education (SSARE-PDP)
during 2001-2002. The most fun I nearly ever had was working with George Kuepper of NCAT, when we co-authored a
project for the National Center for Appropriate Technology (NCAT/ATTRA),
developing checksheets, workbooks, and generic recordkeeping forms for
organic farms, orchards, market farms, and ranches under grants from the
National Organic Program (NOP) and SARE. These are excellent, and are available on the
