About our Beef —

¨      Our steaks won the Organic Style Beef Taste Test in 2004, and were described as “minerally, pleasant…”

¨      100% USDA-inspected.

¨      Dry-aged for three to four weeks.

¨      Expertly cut, hand-packaged, and promptly frozen.

¨      Each vacuum-sealed package contains 100% beef.

¨      All cuts are selected for dependable quality.

¨      The steaks are large, slightly marbled,  richly flavorful, and when not over-cooked, tender as can be.

¨      The flavor is delicious and deeply satisfying — this is what you’ve been hungry for!

Pasture-Finished beef — in general, is an excellent source of

¨      Omega-3 essential fatty acids,  CLA (conjugated linoleic acid),  vitamin E,  the vitamin B complex,  zinc, iron, and selenium. 
These vital nutrients act to

¨      Maintain normal heart function by regulating blood pressure and heart beat, lessening heart attack risk.

¨      Maintain normal brain function, which alleviates depression, attention deficit disorder, schizophrenia, Alzheimer's disease, and improves cognition.

¨      Prevent cancer.

Grass-fed beef is

¨      Lower in saturated fats and cholesterol, and contains a high percentage of stearic acid, a saturated fat that actually lowers cholesterol levels.

Cornell University revealed that the healthy digestive tract of grass-fed cattle is

¨      Free of dangerous variants of E-coli bacteria.

About our Cattle —

¨      Our beef steers are born here at Waterfall Hollow Farm, and are raised on our organically-managed pastures grazing a variety of grasses, clovers, and herbs.  They drink sparkling sweet Ozark Mountain water.

¨      Fresh pasture during the growing season gives them the highest quality forage available and keeps them naturally healthy, happy, and calm.

¨      We give our steers an extra year to grow to perfection.  This improves the tenderness as well as the flavor of the beef.

¨      Harvest time is usually mid-summer to very late fall.

We’ve cared for this herd since 1981, and we’re admittedly attached to their well-being.

¨      We treat them humanely and with honest affection.

¨      They get all  vet-recommended immunizations, which are encouraged in organic production.

¨      We de-worm with an effective product allowed in organic dairy cattle.

¨      We feed a small amount of grain to them during the cold wet winters.

¨      Our cattle never receive sub-therapeutic doses of antibiotics or synthetic hormones, are never fed animal-source feeds, and are never confined.
